Violin
The violin is harder at the start than piano or guitar, and the difficulty is concentrated in the first six months. Almost all of it comes down to two things: no frets, and a bow arm that has to be learned separately.
Setup comes before everything on this instrument. A badly fitted chinrest or an incorrect hold will cap your progress regardless of how much you practise, so start there even if it feels like a detour.
